Medicinal Food Recipe: Wood Ears Stir-fried with Shredded Pork

This is one of the classical Chinese dishes that I love,similar to Mooshu Pork, but in a simplified version. Black wood ears nourish the blood and fight against tumors and cancers.

lean pork: 1/2 lb
dry wood ears: 3/4 cup
ginger roots: 2T
minced garlic: 1T (optional)
salt: 2 t
cooking wine: 2 T
soy sauce: 1T
corn starch: 1T
vegetable oil: 3 T
water: 1/2cup
MSG 1/8t (optional)

1. Soak the wood ears in a big bowl for 3 -4 hours till soft. Rinse clean.
2. Shred the pork(finger size) and ginger roots(thinner)
3. Mix pork with 1t of salt, soy sauce, wine, and corn starch. Marinate for half an hour.
4. Heat the oil at high. Saute ginger and garlic.
5. Add pork, stir-fry for about one minute till the pork turns white. Add wood ears and continue to sir-fry for 1 minute. Add water. Cover.
6. When you see a lot of steam comes out of the cover, turn down the heat. Let simmer for 5 more minutes. Turn off the heat.
7. Mix in the rest of the salt, and a little bit of MSG. Serve hot with rice.
